Tap in the top right, then tap Settings and privacy. Below How others can interact with you, tap Restricted. Tap Continue. Search for the account you'd like to restrict and tap Restrict next to their username, or tap Unrestrict to unrestrict someone.
You can block the person for a "soft block" and immediately unblock them. By doing this, you're effectively making them unfollow you without them witnessing. They likely won't notice, and even if they do, you can play it off as an error.
People aren't notified when you block them. After you block someone, their likes and comments will be removed from your photos and videos. Unblocking someone won't restore their previous likes and comments.
