Another notable change is death. The biggest example is Goku, who was dead for seven years, causing him not to age, thus making him physically the same age he was when he died upon his return to Earth, and this is clearly noted.
During the Saiyan Saga, in which Goku sacrifices his life so Picollo can take out his brother Raditz, he dies a 23-year-old man. This is where the timeline can get confusing. While he is resurrected a year later, he is brought back and would be chronologically 24, but his body remains the same as when he died at 23.
Though a year does technically pass after Raditz is defeated and Prince Vegeta lands on Earth, Goku spent this time training with Kaio in the afterlife rather than aging on Earth. This is just the first example of Goku aging inconsistently due to being deceased.
After both Goku and the series experienced a 10-year time jump for the epilogue, Goku was now physically 37 and chronologically 44, while Vegeta also points out Saiyans' aging slows once they hit their physical prime to fight longer and more effectively.
Upon his resurrection through the Dragon Balls, Goku remains physically 23 but chronologically ages to 24 when he helps drive Vegeta from the Earth.
The most noticeable aspect of how old Goku's is in Dragon Ball is that Goku seems to stop aging after hitting adulthood at the end of Dragon Ball, his physique, strength, stamina, speed, and other abilities staying just as sharp as ever despite the fact that he's technically approaching 50.

Goku after the 1,000 year time-skip in Dragon Ball Omniverse. He first appeared in the Return of the Gods Saga to help Adrian fight Majin Beegito. His debut was short as he was killed immediately. He has been shown to be an entirely different version of Goku and may be a completely different being.
Goku was born in April 16 age 736 in planet Vegeta. We're gonna use this age because it's the one in the Manga, in the anime he was born in age 737. Three years later in age 739, right before the destruction of planet Vegeta he is sent to earth.
As such, due to the Anime's statement that Old Kai could live for at least another 1000 years, then this should also mean that, with the exchange, Goku's years would have added an extra 1000 years to his own. 7 Killed Goku: Cell
The only thing that saved Earth was Goku using Instant Transmission to move both Cell and himself to King Kai's Planet, where Cell exploded, obliterating Goku and marking the start of his 7-year stay in Other World.
In-universe, Goku dies on November 28 and is revived on November 3 of the next year in order to fight Nappa and Vegeta. Goku later sacrifices his life at the end of the Cell Games, opting to stay dead for seven years before having his life restored by the Rou Kaioshin during the events of the Majin Buu arc.

Yamoshi is the first known Super Saiyan in the history of the 7th Universe, having used its power to lead a rebellion against the other Saiyans. Despite the strength of the Super Saiyan form, Yamoshi wore his stamina out, resulting in his inevitable defeat.
Yamoshi (ヤモシ, Yamoshi) is an ancient Saiyan who could transform into a Super Saiyan long before Goku could. After his death, his spirit wandered in search of six pure-hearted Saiyans, to create the ceremony that would birth the first Super Saiyan God.
