Later into the war, many Jedi wore chest plate armor that resembled modified clone armor designs. Anakin Skywalker and Obi-Wan Kenobi were examples of Jedi that wore these designs. Often, many Jedi continued to wear modified clone trooper gauntlets with chest plates.
The reason many stopped was simply down to mobility. Whilst Jedi armour plate was light and mobile, in relation to armour at least, nothing offered as much mobility as Jedi robes. To boot, robes were traditional and many Jedi saw them as the correct attire and only true combat attire.

Darth Vader always knew his apprentice Ahsoka Tano survived Order 66 - and he even foresaw their fateful final duel on Malachor in Star Wars Rebels.
