Any photos that you archive: Will still be in any albums that they were added to, search results, and folders on your device. Won't be used to create movies or animations.

After using the Free Up Space option, you can still access your photos and videos via Google Photos. The app will list placeholders (in thumbnail form) of all deleted items. When you tap on one, Google Photos will cache the backed up copy from the Google servers and display the photo or video.

The difference between archive and delete in Gmail is that your deleted email will disappear from your mailbox after thirty days. Gmail archive instead of delete means you will be able to retrieve an email whenever you want. Before deleting, be 100% certain you won't need it.
The point of archiving is to give you a central location to store mails that you no longer need direct access to. It also ensures your inbox is kept clean and attachments and other files are kept safe.
