Sugar in Australia is sourced from sugar cane. Most Australian sugar cane is grown on family-owned and operated farms. Farmers prepare their land by cultivating the soil. Once ready, sugar setts (cuttings from mature cane stalks) are planted.
Sugarcane is an Australian success story. Brought to the continent's shores in 1788 on the same ships that transported the first European and African settlers, sugar is now Australia's second largest export crop after wheat.
Queensland's sugar cane is harvested by self-propelled harvesting machines. Some growers contract machine owners to harvest their crop, while others own their machines or share ownership with other growers. There are two methods used to harvest cane. In some cane-growing areas it is possible to harvest the cane green.
Sugar is produced in two principal ways, from beet or cane. In beet production sugar is extracted or leached from sliced sugar beets (cossettes), after which juice is purified through a series of milk of lime and CO2 process steps. The filtered juice is evaporated (thickened) and sugar is crystallized from it.
The Queensland Government was desperate for income, and trade of any kind was often recklessly encouraged. The government supported the setting-up of vast sugar plantations.

Raw materials: Cane Sugar, Beet Sugar, and High Fructose Corn Syrup. Cane sugar is processed into raw sugar by a sequence of operations: harvesting, cutting, crushing, extraction of juice, clarification, evaporation, crystallization, centrifugation, and refining.
Bone char has tricalcium phosphate, calcium carbonate and carbon, which is used in several commercial processes as a filter. To make this bone char, animal's bones are powdered and sold to sugar factories, which is further used during the process of making refined sugar.
Originally the cane was burnt before harvesting but nowadays in the tropical north it is generally cut 'green'. The remaining roots then produce new shoots and several crops may be grown from the same stock before ploughing and replanting is necessary.
Australian Sugar Milling Council members own and run 18 sugar mills, which produce 93% of Australia's raw sugar.
