Cheese is high in fat and calories, which could be problematic on a liver shrinking diet. There are some lower calorie, low fat options such as mozzarella, low-fat cottage cheese and cheddar cheese. However, processed cheeses and higher fat cheeses such as Swiss, brie and blue cheese are not recommended.
So when you follow a strict diet such as this, which is low in starch and sugar, as well as very low in fat, your body loses its glycogen stores and associated water, and therefore your liver shrinks. You may find that you need to urinate (pass water) more often when you are on this diet.

Several studies have found that intermittent fasting can reduce liver enzymes, indicating improved liver health. This may be because intermittent fasting reduces oxidative stress and inflammation, which can lead to liver damage.
Dehydration, electrolyte imbalance, the difference in acidity in the stomach or part of the surgery process have been suggested as reasons why plain water isn't tolerated.
You should not drink with your meals – you may find this difficult at first particularly if you are used to drinking with your meals. However, your new stomach is not big enough to cope with this any more and if you do eat and drink together, you may vomit. Aim to wait 30 minutes after a meal before drinking.
When you drink with meals, you are thinning the consistency of your food, meaning it will take more to fill you up and the food can move through your pouch quicker which will decrease how long you feel full. This can lead to overeating and also cause weight gain.
Healing can begin as early as a few days to weeks after you stop drinking, but if the damage is severe, healing can take several months. In some cases, “if the damage to the liver has been long-term, it may not be reversible,” warns Dr.
