Palate: Much like the nose, there isn't a whole lot of the sherry influence or sweetness in this at first. The mouthfeel is very thick and heavy, almost oily. It's slightly bitter with lots of oak-influence spice.
The aroma is alive with malt, notes of mixed florals, firm pears, honey, and Meyer lemon zest. The flavor profile is classic Speyside with a light, smooth texture and notes of orchard fruits, oak, and vanilla flan. The finish is coating and lightly sweet with more oak and pear.
With its sweet and mellow character, free from smoke or any unpleasant flavors, it is one of the smoothest and most approachable whiskies to enjoy.
It's sweet and “easy” enough for beginning scotch drinkers, but it's suitably flavorful and balanced for even the snobbiest whisky snob.

Excellent & Unique Taste
Both the locally sourced barley and the spring water from the neighbouring Robbie Dhu Springs, which are both of the highest calibres and add to the whisky's flavour, are used by Glenfiddich. The final taste of the whisky is also influenced by the yeast used in the fermenting process.
Both are from the Speyside region and have their unique flavor profiles. If you prefer a smoother and creamier taste, then Glenfiddich 12 might be the right choice for you. On the other hand, if you like a fruity and floral taste, then Glenlivet 12 might be more up your alley.
The whisky is distilled in pot stills and then matured in oak casks for a minimum of 12 years. One reason why Glenfiddich is so smooth is that it's made from high-quality barley. The barley is malted, which means that the starch in the barley has been converted into sugar. This sugar is then used to make the whisky.
Glenfiddich Grand Cru is a 23 year old single malt, which has been aged in American and European oak casks before being finished in French oak cuvée wine casks for up to six months. It's an excellent whisky for the money.

The mouth feel is a little light, but it goes with the feeling of the dram; with a 40% ABV there is nothing harsh but there is a light spice. A flowery sweetness follows with the green fruits then making an appearance, and a wee sensation from dark fruits coming through from the sherry casks used for maturation.
