Kenny Longaker's Story. The Bering Sea is one of the best places to catch wild Alaskan Pollock. McDonald's is the other. From the dock at Dutch Harbor, Kenny Longaker sets out on his boat, the Defender, to catch the wild Alaskan Pollock used in our Filet-O-Fish® sandwich.
The fish used for the Filet-O-Fish patty in various markets is as follows: United States — As of May 2020, contains a battered, fried fish fillet made from Alaska pollock.

McDonald's Filet-O-Fish
McDonald's has been serving the iconic Filet-O-Fish since 1965, and it's one of the healthier fast food fish sandwiches out there. It's the lowest in calories and sodium, compared to the others, says Yelena Wheeler, M.P.H., R.D.N., of MIDSS.
Oily fish are fish that contain at least 10% fat, most of which are the healthier omega-3 oils. In Australia, the oiliest fish include: canned salmon and sardines, some varieties of canned tuna, salmon, gemfish, blue-eye trevalla, blue mackerel, oysters and arrow squid.

According to the McDonald's menu, the whole sandwich comes to 390 calories. It has 19 grams of fat, but that extra fatty goodness is one of the reasons the fish tastes so good. Saturated fat comes in at 4 grams with 0 grams of trans fats.
Filet and fillet are both English terms. Filet is predominantly used in ?? American (US) English ( en-US ) while fillet is predominantly used in ?? British English (used in UK/AU/NZ) ( en-GB ). In the United States, there is a preference for "filet" over "fillet" (64 to 36).
Pollock is a member of the cod family. They can grow as long as 3 feet but typically reach lengths between 12 and 20 inches and weigh between 1 and 3 pounds. They have speckled coloring that helps them blend in with the seafloor to avoid predators.
the Filet-O-Fish has always come with a half slice of cheese. this is to save on the flavor of the sandwich. if it's a full slice you want, make sure to specify that next time you order.
McDonald's ultimately swapped it out for cod before its release because it ended up being cheaper, but it wasn't an easy decision because Kroc didn't want customers to negatively associate the Filet-O-Fish with cod liver oil. This ended up being avoided by referring to the fish as "North Atlantic whitefish" instead.

But king mackerel -- especially ones caught in the Pacific Ocean -- are high in mercury. Doctors say young children and women who are pregnant or nursing should avoid them completely.
Marine fish that may contain high levels of mercury include shark (flake), ray, broadbill, swordfish, marlin, gemfish, orange roughy (sea perch) and catfish. Freshwater fish in Queensland that may contain higher levels of mercury include Australian bass, Murray cod, eel and golden perch.
