Sourdough bread is an excellent source of: Calcium. Potassium. Magnesium.
If you need to lower your potassium, avoid whole grain products and chickpea flour rotis, or other foods made with chickpea flour. Lower potassium choices are white, whole wheat, light rye, or sourdough breads.
Additional low potassium sides like rice, blueberries and sourdough bread complete the meal without exceeding 1/3 of the daily potassium goal. A medium banana at 400 mg potassium is considered high in potassium, since it is only a small portion of the daily intake.
Sourdough bread is quite tasty, but isn't necessarily good for kidney disease. “Sourdough” refers to the process of making the bread, not the nutritional value.
White breads tend to be lower in potassium than whole grain breads, so it can be tempting for people with kidney disease to choose white bread. However, in our research, we were unable to find any white breads that were considered low in sodium and contained no phosphorus additives, so we do not recommend white bread.
I recommend whole grain, whole wheat or multigrain bread for people with kidney disease. Be careful to check the sodium in whatever bread you buy. Bread is a surprising source of salt! Historically, white bread was recommended because it has less phosphorus in it.
Breads with sprouted grain, whole grain, or multigrain may be higher in potassium and phosphorus .
Better options include: cream cheese • cottage cheese • mozzarella • feta • brie • Stilton. If you do have hard cheeses, then good ways to help reduce the quantity used include: grating the cheese instead of having slices or chunks • using mature cheeses, as just a little can still add lots of flavour.
The more bran and whole grains used in baking bread, the higher phosphorus and potassium are in bread. Bread examples that use wheat flour and high amounts of bran are the following: Multi-grain bread. Whole wheat bread.
Avoid black-eyed peas, dried beans, cooked greens, spinach, yams, and sweet potato pie. All are high in potassium.
Dairy and dairy products are also known to be a source of potassium. While not considered a high potassium food, the potassium in cheese should absolutely be made aware. On average, one ounce of cheese will provide about 35 milligrams of potassium.
Pros: For many, sourdough is easier to digest and can help regulate blood sugar levels. Cons: Sourdough is a calorie dense bread, meaning it can be hard to maintain your weight. Although white bread is ideal for fairy bread, it is the least healthy option.
So whole wheat bread trumps sourdough when it comes to the fiber content. We need about 25 grams per day of fiber in our diets, and most of us don't get enough of it. Eating whole grain in general is a better option to help increase our intake of fiber.
Scientists, nutritionists, and health experts all agree that naturally-fermented sourdough bread is healthier than 'regular' white or whole wheat bread – for a multitude of reasons! Sourdough is more nutritious, easier to digest, and has a lower glycemic index. Sourdough also contains less gluten than other bread.
