Cast iron pans can leach a sizeable amount of iron into your food, exceeding dietary intake in some cases. Acidic foods will contribute to much more leaching while an old, heavily-seasoned pan will leach much less iron than a newer one.
The least toxic cookware are non-stick pans and pots, like cast iron, stainless steel, ceramic, glass, and enamel-coated cast iron. These options don't have any Teflon coating on them, making them safe to use.
If they also cook with cast iron, the extra iron may raise their iron levels too high, causing iron toxicity. In early stages, excess iron causes fatigue, unexplained weight loss, muscle weakness, loss of sex drive, and more.

Never cook acidic foods in a cast iron skillet.
You can sauté cherry tomatoes in cast iron, but don't try making a long-simmering tomato sauce. If you recently purchased your skillet and it still needs to be "broken in," acidic ingredients can erode the seasoning and even make foods taste metallic.
Two words: heat & oil.
The most common reason food sticks to cast iron is because the pan is simply too hot. Because cast iron retains heat much better than other types of cookware, you generally don't need to use as high of a heat setting as you normally would with stainless steel or aluminum cookware.

Today, many find cast iron to be too daunting—it's heavy, it requires seasoning (the process of heating fat, like oil, over metal to create a protective coating), and it has to be hand-washed. It can't just be chucked in a dishwasher, or it'll rust.
The Cause: If you accidentally leave your cast iron cookware on any heat source for too long, food, marinades, and sauces can burn and get stuck to the surface. The Fix: Use a pan scraper to remove stuck-on food.
Eggs fall into the category of sticky foods that are not ideal for cast iron skillets that haven't built up their seasoning yet. While cast iron can become non-stick with sufficient use over time, a newer skillet will almost certainly cause your eggs to stick to its porous surface.
Choose the right pan.
Instead, I recommend using a cast-iron skillet. As the onions cook, a delicious fond will develop on the bottom of the pan. If you scrape it up and stir it into the onions, it will make their flavor even richer. Pan size also matters.
It's safe to cook tomato- and wine-based sauces in cast iron, but you should save the vinegary pan sauces for stainless-steel pans—or dilute the vinegar (or citrus) with water or stock. 4.

With its unbeatable heat retention, it's no wonder why experienced chefs all love this material. But besides its ability to retain heat like nothing else, there seems to be a mysterious quality to cast iron that simply comes through in your cooking.
Why Use Cast Iron? Cast iron is ideal for frying and baking because it holds heat much longer than aluminum pans. The food in contact with the pan will sear nicely, while the food above it will cook through radiant heat. This is possible because of the high melting point of the cast iron material.
When cooking on a rusted cast iron there's a chance that some of that material will end up in your food. However, the quantities are so small that they're almost negligible. Even though a rusted cast-iron pan doesn't necessarily present a health concern, it's still not recommended that you cook on it.
