This Is the Only Bread You Should Eat, According to a Cardiac Surgeon. According to cardiac surgeon Steven Gundry, Barely Bread is the only bread we should be eating - and surprisingly, it contains no grain whatsoever.
In Gundry's eyes, the only bread that we should consume contains absolutely no grains whatsoever. He names a product called 'Barely Bread' as the best choice in his book, because it just contains blend of almond, seed and coconut flowers with zero grains.
For many artisan sourdough breads, while the "leaven" is certainly fermented, often the dough is not, or isn't fermented long enough. So even some artisan sourdough breads still contain lectins.
The best sourdough and rye bread varieties to reduce gut inflammation are those made from whole grains. However, if you are intolerant to gluten, you'll want to opt for gluten-free bread options to ease any gut inflammation, since neither sourdough bread nor rye bread are gluten-free.
Sourdough contains less gluten than non-fermented bread, and therefore triggers less inflammation, bloating, pain, or other common side effects to gluten-sensitive individuals. Increased amino acid concentrations in sourdough contribute to healthy muscles, and help reduce the risk of stroke, cancer, and heart disease.
What foods does Dr. Gundry recommend? Overall, Dr. Gundry recommends a diet that relies on pasture-raised meats and eggs; fermented foods like sauerkraut; limited fruit; foods high in resistant starches, such as green beans; vegetables that are not in the nightshade family; and healthy fats such as olive oil.
Usually I only recommend green bananas to eat. But here's a healthy way to use to ripe bananas: Banana Tea. All the potassium nutrient benefits, none of the sugar. Slice both ends off, boil in 3 cups of water for 15 minutes.
If you are on a lectin friendly diet, you are also allowed to enjoy green bananas, but not ripe bananas as they contain lectins in addition to the high amount of sugar.
Seeds: Lectins are contained in the seeds and skins of fruits and vegetables, so avoid pumpkin, sunflower, and chia seeds. Cow's Milk: As a reminder from chapter 2, almost all products from cow's milk contain a lectin-like protein called casein A-1, so avoid ice cream, yogurt (even Greek yogurt), and cheese.
If you're looking for a gluten-free bread alternative, rye bread is definitely not the answer, Dr. Gundry says. Like wheat, rye contains gluten (albeit smaller amounts, says Sussi), which can wreak havoc on your digestive system if you suffer from things like Celiac disease.

And buffalo mozzarella made from buffalo milk is good to go too. Also, high-fat dairy doesn't have casein, so you can still eat organic cream cheese, parmesan cheese, and high-fat cheeses like French or Italian triple-cream brie. Two other favorites are goat brie and sheep's milk cheese.
Whole, unprocessed foods are key, starting with low-lectin vegetables such as greens, carrots and cauliflower, in-season berries, and avocado. Fish, grass-fed beef, and pasture-raised poultry are on the table, as are healthy oils such as olive and coconut.
Some cheeses, such as mozzarella, are made from animal milk and do not contain lectins. Other cheeses, such as cheddar, are made from plant-based milk and may contain lectins.
Dr Steven Gundry, a heart surgeon and cardiologist from California said that he found a link between memory loss and lectins, which are found in cucumbers, tomatoes, whole grains, soy, grains, peppers, sprouted grains and some dairy products. Gundry said that such food could even lead eaters to develop dementia.
Lectin-free fruits include pomegranates, lemons, beets, blackberries, blueberries, apples, plums, sweet oranges, tangerines, and dates.
Lectins everywhere
“Overall, the lectins found in zucchini, carrots, rhubarb, beets, mushrooms, asparagus, turnips, cucumbers, pumpkin, sweet peppers, and radishes, whether cooked or consumed raw, do not appear to cause significant GI problems,” assures Gomer.
“Yogurt is associated with decreased inflammation, decreased insulin resistance and it may prevent type 2 diabetes,” Dr. Hu says. Nutrition researchers believe yogurt's anti-inflammatory power comes from the probiotics it contains, but that has yet to be confirmed with rigorous trials, he says.
Sourdough is one such bread which is recommended due to its anti-inflammatory grains. The bread is created through fermentation making its vitamins easier to digest. Sourdough is also low-glycaemic meaning it won't spike a person's blood sugars and also contains prebiotics which form during the fermenting process.
