Sheep are frightened by sudden loud noises, such as yelling or barking. In response to loud noises and other unnatural sounds, sheep become nervous and more difficult to handle. This is due to the release of stress-related hormones.

Sheep are hooved mammals with woolly coats who feel a wide range of emotions, from anger to boredom and happiness. They form strong bonds with one another and can interpret different emotional expressions, which helps them develop their relationships.
In terms of human faces, a previous study also showed that sheep were able to recognize a specific familiar stockman from their face picture and exhibited an emotional response (vocalization) to it even after not having seen this individual for over a year [8].

If a sheep doesn't trust a dog, it will face it, stomp its feet, maybe even head-butt it. The other sheep may do the same, banding together to make a wall to protect their young and the flock.
Cattle, horses, sheep, goats, and other grazing animals can see color but lack the full spectrum of vision available to most humans because they have only two-color receptors. They do not see red. They are most attuned to yellowish green and bluish purple hues.

The large size of the retina also allows for rather good night vision, and a filament like Tapetum Lucidium, similar to the kind found in cows contributes greatly to night vision. Interestingly Sheep and Goats are farsighted with a slight astigmatism, another common trait of prey animals.
They spend most of the day alternating between periods of grazing and resting/ruminating. Sheep only sleep for around 4 hours per day.
This is why at night you will often hear ewes and lambs baaing and bleating to each other, so that they can pair up. This is why they make such a lot of noise at night time. Some sheep are lucky enough to lamb outside without the close monitoring of the farmer.
