Cooking low and slow means cooking meat at a low temperature between 170 - 225 degrees Fahrenheit for an extended period. At this low temperature, red meat takes 2 hours per pound, while white meat takes 40 minutes per pound, which is considerably longer than high-heat cooking.
For example, a cool oven has temperature set to 90 °C (200 °F), and a slow oven has a temperature range from 150–160 °C (300–325 °F). A moderate oven has a range of 180–190 °C (350–375 °F), and a hot oven has temperature set to 200–230 °C (400–450 °F).
Turn the heat down, way down, and cook it for a long time. Roasting beef at 225 degrees, about 100 degrees lower than most recipes call for, produces a much better roast than one cooked at higher temperatures.
That means we want to slow-cook at 210F or 220F for an all-day cook or slightly higher 240F or 250F for a shorter cooking time. If you want to safely "hold" a dinner that's ready to eat but nobody's home yet, just lower the oven to 180F. Long Cooking Time The time range can be 8-10 hours or 4-6 hours.

Can you overcook something in a slow cooker? Slow cookers are specially designed to cook food for long periods of time, but yes, you can still overcook in a slow cooker if something is left on the wrong setting for longer than it's supposed to be.

Preheat the oven to 250 degrees celsius. Brush beef with oil and season well with sea salt flakes and freshly ground pepper. Place beef in a roasting pan and place in the oven 15 mins to roast. You can use an oven as a slow cooker alternative. The temperature of a slow cooker is about 80 C on low and 90 ºC on high. At such low temperatures an oven will function a lot less well. If you use the oven as an alternative slow cooker, you will have to adjust the preparation a bit for many slow cooker recipes.

This means that you can actually get the best red meat by cooking it at a little below 60°C (140°F) for many hours.

To roast a whole joint preheat the oven to 180°C/160° fan/gas 4 and weigh the joint (with any stuffing, if using) in order to calculate the cooking time. Place in the centre of the oven; Rare – cook for 20 minutes per 450g plus 20 minutes. Medium – cook for 25 minutes per 450g plus 25 minutes.
If you are short on time, cooking on high is fine, but for a really succulent fall-apart roast try to cook it on LOW if you can. Leaner cuts of meat tend to come out better when cooked on HIGH for a shorter length of time. This is because the longer it's in the slow cooker, the more time it has to lose moisture.
