Sith bear their birth name as well as the name given to them by their master. The Jedi typically refer to Dooku as “Count” because that is the name they prefer to associate him with before he fell to the Dark Side. This is why, despite bearing both names, Dooku is most often described as a Count in Star Wars.

Studying Jedi Archive records, Dooku based his new weapon design after the curved hilts that were standard during the heyday of Form II lightsaber combat. The curve allowed the hilt to fit better into his hand, allowing for superior finesse and precise blade control.
