Leia is annoyed with Han, who insists she has feelings for him, so she kisses Luke to prove she doesn't. Presumably, the scene was simply meant to make Han jealous.
It's among the most memorable dialogue in all of Star Wars, and is often cited as one of the cleverest improvised lines in movie history: Moments before Han Solo is frozen alive in carbonite by Darth Vader, Princess Leia says he loves him. “I know,” he responds.
Han, worried that Leia is injured, is relieved when she's okay -- and finally utters the words, "I love you," when she reveals she has a blaster. The princess replies, "I know," before shooting two Stormtroopers. Only in Star Wars. There's great tension to the scenes between Han and Leia on Hoth.
Whenever a movie character says "I love you" to someone, the response is usually "I love you, too." It's almost expected, so naturally that's what George Lucas intended for Han and Leia in Star Wars: The Empire Strikes Back.

However, Leia's strong-mindedness during Vader's probe denied him the opportunity to discover she was his daughter. That serves to justify Vader's lack of awareness of his connection to Leia, although, perhaps, not as satisfyingly as if Lucas had planned for the relationship from the beginning.
Darth Vader didn't learn he had a daughter until Return of the Jedi, when he stood before Emperor Palpatine. The Emperor's power probed Luke's mind, attempting to goad him to fall to the dark side, and he discovered Leia's existence. "Sister," the Emperor taunted.
The most straightforward explanation would be that Leia knows the person who rescued her is Ben, and never connected the dots that Ben is actually Obi-Wan.
While Return of the Jedi would ultimately reveal them to be siblings, A New Hope implied Luke's attraction to Leia throughout, while the two kissed multiple times in The Empire Strikes Back, with further romantic moments ending up on the cutting room floor, as seen in the movie's deleted scenes.
