Australian Salmon are wild caught in coastal waters, often adjacent to estuaries and off coastal beaches. The majority of the commercial catch is taken by Purse Seine, sometimes with the use of spotter planes to locate the large schools.
Atlantic salmon is a non-native species farmed by three major companies in Tasmanian waters. Farmed Atlantic salmon is the highest value and volume fishery product in Australia.
The eastern variety is caught along the coasts of southern NSW, south-eastern Victoria, northern and southern Tasmania, and the western variety is caught off the south-western tip of WA, south-western Victoria and south-eastern SA.

It is farmed mainly in south-eastern Tasmania, although there are some inland, freshwater farms in Victoria, primarily to supply roe. In its native habitat it inhabits cold streams, rivers and lakes, draining into the Atlantic Ocean, swimming out into the ocean seasonally and returning to freshwater to spawn.
- Herring, pilchards, whitebait, sardines and anchovies are all wild and will never be farmed. They're cheap and the equivalent of a briny superfood. Head and stomach can be eaten easily.
Australian Salmon are mainly caught in NSW using haul seine nets deployed from sandy beaches. A small portion are caught using purse seine nets. Stocks are still recovering from historical overfishing but are on a promising trajectory. Overfishing is not likely to be occurring.
