The Marissa we see in Immortality isn't the 'real' Marissa, but The One. This is why she doesn't appear to age through the course of her career. However, the One still has certain memories of the people she has consumed, and traces of the real Marissa remain. The real Marissa's last wish was to live forever.
The One's Final Moments
We see The Other One douse The One in gasoline and set Marissa's body on fire. In the final moments of the game, The One breaks the fourth wall and speaks to the player saying, “I'm part of you now.” Immortality ends by implying you, the player, are now the host for The One.
