Gaara's death came at the beginning of Naruto: Shippuden after he was kidnapped by Deidara and Sasori of the Akatsuki. They extracted the One-Tailed Shukaku from Gaara, and the process killed him. This was shocking, as so much had gone into showing Gaara's reform.
