Give the air fryer basket a good shake halfway through the cooking process to make sure the veggies aren't sticking. Don't overcrowd your insert, or else the air fried veggies will turn out mushy. Go light on the oil. Too much, and the vegetables will become oversaturated and not crisp up.
Be sure you do not let the vegetables thaw before air frying them. When the vegetables start to thaw is when they get soggy. I have found the best way to cook them is straight from the freezer, as fast as possible.
Oil or fat has not been used correctly
To find out how to use oil in your airfryer correctly, please follow the next tips: Dry the outside of the food properly before you add oil. Do not use too much oil, as this will make the food less crispy and more fattening.
To cook firm vegetables in an air fryer, preheat your air fryer to 375°F (190°C). Prep your veggies by chopping them to the size you want (remember: smaller pieces cook faster!) Optionally drizzle with oil and add to your air fryer in as flat of a layer as possible.
Why is my food not crispy in the air fryer? If the air is not hot enough, or if you overcrowd the basket, your food will not come out crispy. Preheat the air fryer for at least 3 minutes, and work in batches if you need to.
If your potatoes don't come out crispy, you may have overcrowded the basket. The hot air needs room to circulate. Otherwise, your potatoes may come out soggy. If your air fryer is small, you may need to cook in batches.

Your oil probably wasn't hot enough. Generally speaking, the higher the temperature the less oil is absorbed by the food and the crispier the result. (See above about using a thermometer to monitor oil temperature.)
The Oven Temp Is Too Low
But, they'll turn out soft and soggy instead of crispy and caramelized. The solution: Turn the oven temperature up to 400°F to 425°F. The high heat will quickly coax out all those naturally sweet flavors while keeping the vegetable tender-crisp. Everything will be golden brown and delicious!

In a bowl, toss your food in a few teaspoons of vegetable oil or olive oil along with your seasoning before putting it in the air fryer. This method works best for cooking fresh meats and vegetables.
You can use any oil in an air fryer that you can use in an oven. This includes vegetable oil, olive oil, coconut oil, canola oil, and more.
If you're using an air fryer that has a nonstick surface, you usually don't have to spray the basket too. However, it depends on the type of food you're cooking. For example, salmon with skin tends to stick so for something like that, I would spray or brush the basket with oil.
For fresh vegetables or large proteins like chicken or steak, coat the food with at least 1/2 teaspoon of oil per batch to ensure that the food gets crisp and golden while air frying.
