One of the reasons you may not be able to unsend a message after you've sent it is that the recipient blocked you. If you sent someone a message but didn't unsend it immediately afterward, they probably blocked you in the time that passed between sending and attempting to unsend.
Hover over the message you'd like to remove and click More, then Remove. Click Remove for You or Unsend for Everyone.
You can permanently unsend a message that you've sent or just hide a message from your view. If you select Unsend for You, other people in the chat will still see the messages in their chat screen. If you select Unsend for Everyone, people included in the chat won't be able to see the unsent message.

You have about 2 days after you've sent a message to request to Delete for Everyone. Only group admins can delete messages sent by other group participants. Group admins have about 2 days after someone else sends a message to request to Delete for Everyone.

Edit and Unsend within 15/2 Minutes
Another reason why edit and unsend messages is not working on iOS 16 is a certain time limit. You can edit a message for 15 minutes after you send it and can unsend a messages for up to 2 minutes. Each message is given 5 edits.
You have ten seconds to change your mind after you send an email. Tap Undo Send at the bottom of the screen to pull back the email.
To edit or unsend a message in iMessage, ensure your iPhone is running iOS 16. Then go to the message's options and select Edit or Undo Send. The message can now be edited or can be deleted from your device and the other person's device (assuming they, too, have iOS 16.)
