The Death Eaters and the Dark Lord don't simply cast Avada Kedavra on everyone all the time because it doesn't suit their long-term goal of ruling the world and having a wizard-run society.
The main reason why they didn't use Avada Kedavra is that they are attacking a school full of children. Although Death Eaters are what we consider "evil", not all of them are as bent on evil as Voldemort. We know of at least 4 (Crabbe, Goyle, and the Malfoys) of the Death Eaters had children of their own in the castle.

Hogwarts Legacy's Ranrok Dragon is Technically Not 'Alive'
Ranrok absorbs this swirling crimson substance and becomes the Ranrok Dragon that players then fight as Hogwarts Legacy's final boss, but because it is composed of magic and adorned in what looks like metal or stone, Avada Kedavra is not effective on it at all.

Players cannot kill professors with Avada Kedavra in Hogwarts Legacy. Professors, much like students, are off-limits when it comes to being susceptible to Unforgivable Curses like Avada Kedavra. The reason is the absence of a morality system in the narrative.
History Of Avada Kedavra
The Killing Curse was created in the early Middle Ages by Dark witches and wizards. Primarily, the curse was used to quickly slay opponents during a duel.
Firestorm. Firestorm was a spell that created a large ring of fire around the caster's wand. This spell is one of the last and most powerful spells that Albus Dumbledore cast using the elder wand before his death.
Voldemort intentionally made six Horcruxes, but when he used Avada Kedavra on Harry, he unintentionally created a seventh Horcrux. Instead of dying, Lily's love for Harry created a counter 'curse' known as Sacrificial Protection and saved Harry.
They are the Killing Curse, Avada Kedavra, the Cruciatus Curse, Crucio, and the Imperius Curse, Imperio.

Speak to Sebastian in the Undercroft after this and he'll teach you any Unforgivable Curses you have missed up to that point, including Avada Kedavra.
In case you missed learning the Cruciatus Curse during the quest, you can visit Sebastian in Undercroft later on in order to learn any Unforgivable Curse from him, including Crucio. Players can add the Cruciatus Curse in their Build in the late game as it is an extremely powerful spell and helps defeat enemies faster.
During this quest, you will get the chance to learn Crucio from Sebastian. You can, of course, decline his proposal, but keep in mind that using this Unforgivable Curse in the game won't negatively impact your character or the story.
Horcruxes can only be destroyed in specific circumstances that allow it's complete and utter destruction. In the movies, the Horcruxes are destroyed in these ways: The killing curse — “Avada Kedavra.” Fiendfyre — a curse that creates powerful and magical flames.
Avada Kedavra being the most powerful and dreadful of the 3 Unforgivable Curses, can be unlocked only very later on in the game. You need to complete the Quest Line of Sebastian Sallow, at the end of which, you'll be given the choice of wanting to learn the Killing Curse.
