Vinegar causes the potatoes to form a thin crust that further helps in retaining their shape. Vinegar increases the acid pH levels of water which further helps the potato just like when you add a little salt to the water while boiling eggs.
Boiling the potatoes in a salt and vinegar bath allows them to soak up all of that briny flavor before you dry them off and crisp them up in the oven. The result is a soft-in-the-center, crispy-on-the-outside potato that's loaded with flavor.
Combine potatoes, 1 cup vinegar, and 1 Tbsp. kosher salt in a medium saucepan; add water to cover by 1”. Bring to a boil, reduce heat, and simmer until potatoes are tender, 20–25 minutes; drain and pat dry.
Add a tablespoon of butter or margarine to the cooking water when boiling potatoes to prevent the water from boiling over.
If you cook potatoes in water, it's likely they will become mushy after a while. To fix this and keep your potatoes intact, pour a little bit of vinegar (white, wine or cider) in cooking water. It works like magic! Don't forget to rinse your potatoes afterward.

When you boil potatoes, vegetables, pasta, etc. they absorb the flavor the liquid. So adding salt and vinegar to the water allows potatoes to absorb those flavors while boiling.
Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.
What happens if you boil down vinegar? When you boil vinegar, evaporation takes place, changing the acetic acid and water from liquid to gas. However, the acetic acid has a lesser vapor pressure than the water, causing the water to dominate this vapor phase and then decrease in the liquid phase.
You can expect higher concentrations of acetic acid to increase the boiling point even more. Diluting the vinegar will bring the boiling point closer to that of pure water.
Studies confirming vinegar's antibacterial properties: Household natural sanitizers like lemon juice and vinegar reduced the number of pathogens to undetectable levels. Vinegar can inhibit growth of and kill some food-borne pathogenic bacteria. Plus, vinegar's bactericidal activity increased with heat!
Package the vegetables and liquid into jars, cover them in the remaining hot vinegar solution and can them. Either way, the vinegar's acetic acid will increase the the vegetables' acidity and kill off any existing microorganisms, which will help prevent prevent short-term spoilage.
Cubed spuds will take around 15 minutes where larger chunks or whole new potatoes will be 20-25 minutes. To check when they are done, pierce the potatoes with the tip of a knife to see how much resistance there is. If it goes in easily, you're done!

Directions. Soak the potatoes in enough cold water to cover, stir in 2 tablespoons vinegar and place in the fridge for at least 1 hour and up to 4 hours. When you refrigerate the potatoes, the starch will turn to sugar which is a good contrast to the vinegar in this recipe.
How long can peeled and cut potatoes sit in water before cooking, before they begin taking on too much water? A: We usually recommend no more than 24 hours. You can keep the potatoes from absorbing the water by making sure the water is not salted, and is chilled (you can even add ice to the water).
Rinsing potatoes helps remove excess starch, so it is recommended to rinse the potatoes before cooking. To ensure even more starch is out of the way, it's recommended that they even be quickly rinsed after boiling. We recommend using hot water for rinsing after boiling and cold water prior to boiling.
Add salt and vinegar to the water before cooking.
The salt permeates the shell a little bit, and the vinegar helps to break down the shells, making them easier to peel.
Add lemon juice or vinegar
Just like you might use a squirt of lime juice to keep guacamole from browning, a bit of lemon juice or white vinegar in the bowl with the potatoes will ward off gray hues. Use one teaspoon to a half gallon of water to get all the anti-browning impact with no noticeable flavor changes.
A quick rinse under cold water can wash away much of the surface starch. More starch is removed from a cut potato than a whole peeled potato, because a greater surface area is exposed on cut potatoes. Soak them in cold water for as long as a few hours to remove more starch than by rinsing alone.
For most potato dishes it's important to add the potatoes to cold water and allow the water to come to a boil with the potatoes in the water. The potato starch can react as soon as it comes in contact with hot water, which will promote uneven cooking and mealy potatoes.
If your potatoes have been growing in very dry soil, the potatoes themselves will have a fairly low moisture content when harvested. What this then means is that when the potatoes are build they absorb more water and fall to pieces quite quickly.
Just be sure to store peeled potatoes in water for no more than 24 hours. After that, the cool refrigerator air will convert the starches in the potatoes to sugar, causing the flavor and texture of the spuds to change. Instead, just start cooking potatoes for a mash, potato salad, or hash browns.
