Sith bear their birth name as well as the name given to them by their master. The Jedi typically refer to Dooku as “Count” because that is the name they prefer to associate him with before he fell to the Dark Side. This is why, despite bearing both names, Dooku is most often described as a Count in Star Wars.
Bottom line, Dooku never considered himself a Sith. And he wasn't; he was a man looking to change the galaxy in a way the Jedi were unwilling to try. And that is why he joined the Sith and became Darth Sidious' apprentice, Darth Tyrannus. When Dooku became Sidious's apprentice, he was already an elderly man.
The reason Dooku joined the Separatists, he said, was that he learned a terrible truth: a Sith Lord called Darth Sidious controlled the Senate. With Obi-Wan at his side, they could destroy the Sith. “I'll never join you, Dooku,” the Jedi said.
Count Dooku, a Force-sensitive Serennian human male, was a Jedi Master who fell to the dark side of the Force and became the Dark Lord of the Sith Darth Tyranus during the final years of the Galactic Republic.
Count (male) or countess (female) was a title of nobility. Dooku, a Sith Lord and the political leader of the Confederacy of Independent Systems during the Clone Wars, was the count of the planet Serenno.
While Dooku was certainly evil -- and even had a Darth sobriquet, Tyranus, though he rarely used it -- he was never quite a Sith, at least not in the true sense of the word. Unlike those who espoused the Sith doctrine, Dooku wasn't motivated by hatred or fear, but by the same purpose that drove him as a Jedi.
Count Dooku of Serenno, also known by his Sith name Darth Tyranus, or simply as Dooku, is a fictional character in the Star Wars franchise, created by George Lucas.
Though he saw Anakin's potential, Yoda could not ignore the danger inherent in Anakin's unrestrained emotional attachments. To teach Anakin responsibility, Yoda assigned Skywalker a Padawan learner: Ahsoka Tano. Yoda knew there would come a time when Anakin had to let go of Ahsoka.
There's no actual meaning to the word “darth” in the real world, only the in-universe explanation of a Sith title. Like many other things in Star Wars, “Darth” has taken different meanings, and ended up becoming a title related to the dark side of the Force.
The Dooku episodes explained how the former Jedi Master became disillusioned with the Jedi, betrayed left the Order and killed Master Yaddle. In short, he thought that the Jedi were becoming too subservient to the Republic and the Senate.
Darth Maul
Even though they were both trained by Palpatine, Dooku and his predecessor, Maul have been enemies every since his mind was restored by Mother Talzin. This is because the two hated each other. Dooku despises Maul for being a threat to him and Maul hated Dooku for being his replacement.
Qui-Gon Jinn was called a Grey Jedi by his peers for defying the council in training Anakin Skywalker (and then passing his training on to Obi-Wan Kenobi).
Darth Jar Jar, known to most as Jar Jar Binks, was a Gungan Sith Lord. He survived the Battle of Naboo and became a Representative of Naboo, when he helped to give Darth Sidious emergency powers. After the fall of the Galactic Empire, he forced a small alien named Snoke under his evil wing.
A dark side warrior with a mysterious past, Kylo Ren was neither Jedi nor Sith, but a product of both sides' teachings. Once an apprentice of Luke Skywalker's, he killed his fellow students and drove Skywalker into exile, becoming a First Order warlord and servant of Supreme Leader Snoke.

In the now-abandoned Legends continuity, his birth name appeared to be Maul, with the title of "Darth" simply added to it when he was taken on as an apprentice by Darth Sidious.
Even though Kylo Ren uses a red lightsaber, harnesses the dark side of the Force, and wears a cape, he is not a Sith. Because of that, he can never hold the title of Darth. Instead, he was just a chaotic mess of the dark side (until he eventually found his way back to the light).
Darth Shain, headmaster of the Korriban Temple, took notice and convened with the Dark Councilor and Dark Lord of the Sith Darth Shane McMahon, who decided to confer the title of Sith Lord to the young apprentice at the age of 11, making him the youngest Sith Lord in the history of the Sith.
By the time of the One Sith, the "Darth" title was reserved only for those who proved their power and their unquestioning loyalty to Darth Krayt.
