The orange magic in Doctor Strange was a result of borrowing energy from other, non-dark dimensions. And Wanda's magic is red because, well, she's the Scarlet Witch!
Wanda's psionic abilities are due to the exposure to Loki's scepter that contained the Mind Stone. It emanates as an energy projection from her hands and body as a red vapor mist, which she can use her telekinetic abilities to manipulate her natural born chaos magic.
It could be reflective of her journey towards assuming the role of Scarlet Witch. (More on that in a bit.) Or it could denote her closeness to Vision; she's in a relationship with him by Infinity War, and Vision's costume is red. Regardless, the red appears to be her signature hair color going forward.
Scarlet Witch derives her powers from the Mind Stone. Her “red energy” is technically pure Mind Power. It can be used to lift objects (telekinesis), manipulate/read minds (telepathy), and even produce a destructive blast of Mind energy.
As Shakman notes, Wanda's powers were affected by her experience with one of the Infinity Stones. Meanwhile, as the MCU witch with roots to Salem, it makes sense Agatha's magic is purple, as that's the color most traditionally associated with witches.

In "Wandavision," she faces off against a witch named Agatha Harkness, whose hands also become stained after trying to absorb Wanda's chaos magic. It's likely Wanda's hands are also becoming stained because she's been studying the dark arts.
In the main Marvel Comics continuity, despite all her power, the Scarlet Witch could not stand next to god-like forces such as the Phoenix Force, Galactus, and the Living Tribunal.
Wanda Maximoff (better known as her superhero alter-ego, the Scarlet Witch) is arguably the most powerful sorcerer/magic user in the entire Marvel Universe. In 2015, it was revealed in Uncanny Avengers (Vol. 2) #4 that she and Pietro are not mutants but humans who received superhuman genetics due to the experiments of the High Evolutionary. In Wanda's case, the High Evolutionary's genetic tampering made her more powerful in magic than she would have been otherwise.
