This could signify a few things: Saitama truly became significantly more powerful than he was yesterday, but this assumes that the VGS is capable of fully simulating Saitama's full power.
If we move our arms inwards in an attempt to punch ourselves, it produces less force. Also, our brains would reactively reduce the force if it realizes that we're punching ourselves - which means that Saitama can likely never punch himself with his full power, and thus be able to survive his own punch.

He is immortal, so he must live forever... His power isn't all about his body, but he is rather healthy, considering he's still doing his workout, so i reckon somewhere above 100 years, considering he's as normal as everyone else when it comes to basic human things.
Whether an enemy is as strong or even stronger than him when the fight begins, Saitama will surpass their level at some point. Saitama will never reach his maximum power because he does not have a maximum, he will just keep increasing his power infinitely, like he did in One Punch Man Chapter 168.
Secondly, some people claim that the writer of OPM(One) has said that the limit of Saitama's power is that he can destroy half a universe with one full-powered punch. This isn't true. One has never said anything like that, and it is only a rumor.
