To defend the fortress you will need to recruit new orc captains, but though it is in your power to dominate them, as Talion had during the base game, Eltariel refuses to do so. Instead she must do a recruit mission for those she wants.
Since she can't dominate Orcs (and the reason in game is SO ♥♥♥♥ING STUPID) it takes away a massive amount of the appeal for the game. The nemesis system is the biggest appeal of the game and Eltariel doesn't have ANY cool or unique fun ways of interacting with it. She can interact with it LESS than Talion.
According to the epilogues of Shadow of War and The Blade of Galadriel, both Eltariel and Talion were in Gorgoroth when Sauron fell.
You can actually level up orcs by letting them kill you if they're an enemy, too. They'll go up a few levels and even potentially earn a new trait or two in the process, and this is probably a faster, easier way to do it than dominating them first, as long as you can bear the humiliation!
How to Recruit Orcs With Iron Will in Shadow of War. Unlike orcs carrying the Unbreakable trait, there is a way to recruit Captain with Iron Will. First, you'll have to track down and fight the Captain you want to recruit, reducing his health until he has the Broken status effect.
Sometimes after a betrayal/rebellion an orc will gain the Iron Will or Unbreakable trait, so you may have to shame them once or more to make them recruitable again, but otherwise they are just as available as any other.

There, Eltariel attempts to get Talion to give up Isildur's Ring before he falls to Sauron. However, because of her poor choice of words, Talion's fury at her betrayal drives him into his complete corruption.
In the 2017 sequel Middle-earth: Shadow of War, Celebrimbor abandons Talion so he can pursue his quest for vengeance alone. He's briefly able to hold his own against the Dark Lord by possessing the Elven assassin Eltariel.
The Wraith is a companion to Talion as he tries to take vengeance on Sauron and his Black Captains as they return to Mordor. This elevates the importance of the story behind Middle-earth: Shadow of Mordor, and this may make it more interesting to hardcore Tolkien fans — like myself.

Does it matter who I point as Overlord? Yes, actually. Marauder overlords means there are more loot orcs in the area to kill and get rewards from. All overlords affect the region in some way, even if it is only aesthetic.

The Cleric is the Orc's best option for divine spellcasting, and if you stick to domains which provide proficiency in heavy armor you should be okay.
Any regular orc (slaves too, but not always) gets promoted to a Captain if they kill you. By choosing the orc that kills you, you make certain that the desired type of captain will appear. They may not be Legendary, but if you allow the same orc to kill you repeated, they will eventually become Legendary.
The Uruk-hai are stronger, larger, and can take the sunlight much better than the Orcs. In the Peter Jackson films, the Orcs actually conspire with Saruman at Isengard to create the Uruk-hai, as there are scenes of them overseeing the physical creation of the new soldiers.

Uruk-hai were later bred by the wizard Saruman the White late in the Third Age, by his dark arts in the pits of Isengard. The Uruks in the service of Isengard used the symbol of the white Hand of Saruman, featured on their banners, helmets, and faces.
