I think there are lots of animals that will eat, or at least nibble or partially eat, lemons: rats, deer, raccoons, etc. You are assuming that all animals find lemons too sour, but it could be that humans just have more sensitive sour receptors on their tongues than other animals.
Rats and possums are common pests of citrus and will eat the peels of fruits. Sometimes they will leave the peel and eat the flesh or the entire fruit. Control rats with baits.

If their leaves tend to yellow, as an alternative to the well-known method of coffee grounds, you can dilute 2 tablespoons of lemon juice in 1 liter of water and use it a couple of times a week to water the soil. Be careful not to use this solution on the leaves as it may impair photosynthesis and wither them.
