Deleting someone's number only deletes the number in their contact card in the contacts app. The person can still send you texts. If you don't want them to contact you, add them to the blocked numbers in settings app under phone or messages.
When you delete a contact, it won't appear in the contact list as well. Deleting blocked numbers means you are unblocking the blocked numbers. Therefore, after deleting blocked numbers, the numbers can call on your number as well as send you messages.
Once blocked, the phone number remains blocked on the iPhone even after you delete it from your Phone, FaceTime, Messages or Contacts apps. You can confirm its sustained blocked status in Settings.
Your deleted contacts are moved to your Trash. After 30 days in your Trash, contacts are deleted permanently.
When you delete a contact, it permanently deletes it from your device. If you delete a contact from your email account, you also permanently delete the contact from all devices signed into that email account.

If you are not seeing the contact's information or online status, and you can't add them to a group message, you've probably been blocked. The best way to be sure they haven't deleted their account is to have another user search for their contact.
Because they don't want to talk to you, that's why, and because they want to keep you from contacting them. Why else would they delete your number? The only thing you can do, if you want to keep even a shred of self-respect, is to accept their decision and move on.
Your status updates can only be seen by someone if: You have their phone number in your phone's address book. They have your phone number in their phone's address book.
When someone you've blocked tries to text you, you will not receive text messages from them. The blocked person also does not receive any notification that they're blocked. However, many iPhone users may be able to deduce that you've blocked them. This is because of the iMessage text “status” feature on iPhones.
