Once you complete the quest, which sees you reach a cave filled with Inferi, you'll have to complete a short battle against a character we won't name here, after which you'll be given the option to learn Avada Kedavra.
The quest in question that you need to complete is In the Shadow of the Relic. The game recommends you reach level 28 before you start this quest, and requires you to have completed all previous Sallow's quests up to and including In the Shadow of Hope and main story mission Lodgok's Loyalty.
Avada Kedavra being the most powerful and dreadful of the 3 Unforgivable Curses, can be unlocked only very later on in the game. You need to complete the Quest Line of Sebastian Sallow, at the end of which, you'll be given the choice of wanting to learn the Killing Curse.
You will also need to have completed a long line of Relationship Sidequests with Sebastion Sallow, starting with "In the Shadow of the Undercroft" and continuing to the quest "In the Shadow of the Relic." Once the prerequisites are met, the quest to learn Avada Kedavra becomes available at level 28.
If you don't turn Sebastian in after completing his questline, you can still learn any Unforgivable curse from him if you missed any, just talk to him in the Undercroft.
The only way to truly learn Avada Kedavra in Hogwarts Legacy requires you to pick it up from Sebastian Swallow, as well as follow a specific path to get here.

If you choose not to turn Sebastian in, he will remain at Hogwarts and get away with murder (literally). If he hasn't already taught you the Unforgivable Curses, you can chat to him later and he'll teach you them.
Once you have opted to not turn him in, and fully completed his quest line, you can head to the Undercroft to learn it from him at any time. That is how you learn the Killing Curse, Avada Kedavra in Hogwarts Legacy.
Though Harry encountered many opportunities that deemed Avada Kedavra necessary, it remains as one of the Unforgivable Curses Harry Potter never cast. For one, he viewed the spell as an immoral practice commonly used by users of the Dark Arts.

History Of Avada Kedavra
The Killing Curse was created in the early Middle Ages by Dark witches and wizards. Primarily, the curse was used to quickly slay opponents during a duel.
In order to unlock Crucio in Hogwarts Legacy, you must complete the mission in the Sebastian Sallow quest line. Eventually, as you complete more of them, you'll get the chance to complete the mission, “In The Shadow Of The Study”.
Keep in mind that there are no in-game consequences for using Avada Kedavra, or any of the other unforgivable curses, in Hogwarts Legacy. Other characters may comment on it, but it won't have any real impact.
So when Voldemort used the curse with the Elder Wand, Harry disarmed him, and the curse rebounded. Since Voldemort had no Horcruxes left, the curse killed him. So in this case, a wizard can “block” Avada Kedavra if the wand recognizes them as their master.

If you decide against learning Avada Kedavra from Sebastian, that's not the last chance you'll get to learn or use the spell. Once you return to the castle, you can visit Sebastian in the Undercroft in the Defence Against the Dark Arts tower, and ask to learn about it.
Who is immune to Avada Kedavra? Phoenixes were semi-protected from the Killing Curse, due to them being immortal. In 1996, Fawkes swallowed one intended for Albus Dumbledore, causing him to burst into flame and die instantly. However, he then was reborn from his ashes.
