You won't be able to catch any Alpha Pokémon right away, as you will need to have a specific Star Rank to even unlock the ability to catch some of them depending on their level.
When it comes to capturing Alphas, I'd recommend you use Ultra Balls, which can be obtained after reaching Star Rank level six. Next, there are Weighted Balls, which includes Heavy Balls, Leaden Balls, and Gigaton Balls.
Unfortunately, Alpha Snorlax is level 45, which is much higher than the other Pokémon in this low-level starting zone, and trainers will likely be unable to capture it without blacking out the first time they explore the area.
Alpha Infernape is, unfortunately, inaccessible for a long time in Pokémon Legends: Arceus, as it can only be found on Ramanas Island in the Obsidian Fieldlands.

In Pokemon Legends: Arceus, Cranidos is one of the rarest Pokemon in the entire game. If you're looking for Cranidos, the Pokemon can only be found in a space-time distortion in the Coronet Highlands. Even if you find yourself inside one of these distortions, there's no guarantee you're going to encounter Cranidos.
The highest-level Alpha Pokemon in Pokemon Legends: Arceus is a Garchomp that has grown all the way to level 85. It should be one of the last you'll collect on your journey, but the payoff will be well worth the wait. Garchomp is a Dragon and Ground-type Pokemon found in the freezing Alabaster Icelands.
As such, when players load their save, Pokemon Legends: Arceus will immediately load in a new Alpha Pokemon. This newly spawned Pokemon will have a chance of being a shiny.
There are two types of alphas: those that respawn and those that appear at random. Only the first type consistently respawns in the same area, even if you already capture or KO it. However, it can be difficult to tell which type of alpha it is if it's your first time seeing it.

You can find an Alpha Shiny Eevee in the wild as soon as you gain access to the first map, the Obsidian Fieldlands. But just be warned: it's not easy to spawn, especially in its rare Shiny version. A Shiny Alpha may also be found during Mass and Massive Mass Outbreaks if you're lucky enough to get an Eevee one.
While we haven't totally confirmed it yet, it seems that the ability to capture alpha Pokémon is tied to your star rank, subsequently unlocking the ability for higher-level Pokémon to obey you. Once you reach five star-rank for example, Pokémon up to level 65 will obey you.
Alpha Lucario is one of the strongest Alpha Pokémon trainers can catch in Pokémon Legends: Arceus, but they'll need a strong team and a good strategy.
Every Pokémon has the chance to appear Alpha as long as they Pokémon can appear in the wild. Unfortunately, this means there are no Alpha mythical or legendary Pokémon available in the game. They also have fairly low catch rates, making them difficult to obtain.
