When you delete a piece of data from your device — a photo, video, text or document — it doesn't vanish. Instead, your device labels that space as available to be overwritten by new information.
In the Messages app , you can recover deleted messages on your iPhone. With Messages in iCloud, anything you delete and recover from iPhone is also deleted and recovered from your other Apple devices where Messages in iCloud is turned on.
By default, your iPhone keeps your iMessages and SMS texts forever. If you have multiple years of synced messages with iCloud, it can take up valuable space. But, of course, that is more important on devices and iCloud, where space is at a premium.

The cell tower information is generally included. Most cell carriers retain content data between 3-7 days. The exceptions are: AT&T, Boost and T-Mobile which have zero days retention.

You can recover deleted messages from Facebook Messenger by downloading them or checking old email notifications. You can also recover them by looking in the cache of the Messenger app, if you use Android. You can also check your archived messages or ask the person you were messaging with for a copy.
