Try grapeseed oil, vegetable oil, or sunflower oil as a 1 for 1 substitute for canola oil. Find organic versions of these oils if you can. They all have a neutral flavor and are pretty interchangeable with canola oil.
Australian canola oil is grown throughout the grain belt regions; from Northern NSW through Victoria, South Australia as well as Western Australia. It is Australia's largest oilseed crop and has seen significant growth in the last 20 years; now averaging approximately 3 million mt annually.
The term “canola” refers to specific varieties of the oilseed rape species and the oil and seeds obtained from these plants. Canola oil is produced from the seeds of these varieties, which have been bred to contain less than 2% erucic acid in the oil.
Canola is grown around Australia and is easily recognised by its vivid yellow flowers. About 20 per cent of the national canola crop is genetically modified. GM canola currently licenced to be commercially grown in Australia is resistant to herbicides.

Exports. Geographically, Australia is well placed to supply the export markets of Asia with high-quality canola for oil and meal production. Australia supplies more than 2.5–3 mmt of canola (15–20 per cent of the world's trade) to Europe, China, Pakistan, Japan and other international markets annually.
Just like olive oil, canola oil comes in a number of different varieties. How the oil is pressed/produced, and what kinds of seeds it comes from are the two major factors that determine what the grade each oil is.
Australia produces 1.9 to 2.7 million tonnes of canola grain each year. There are also small quantities of minor oilseeds such as safflower and linseed grown in Australia. In Victoria the main canola production area is the south west but the crop is important across the grain belt.
Canola oil is high in monounsaturated and polyunsaturated fats, making it technically a heart-healthy option. Olive oil, on the other hand, is rich in antioxidants and anti-inflammatory compounds, making it a better choice for reducing the risk of chronic diseases. It also has better and deeper flavor.
Nutrition Australia has called for plant oils scores to align with the Australian Dietary Guidelines, which recommend minimising saturated fat (found in high levels in butter, coconut and palm oils), but to treat all oils predominantly made up of healthier unsaturated fats (which includes canola oil, olive oil, avocado ...
Oils that contain lower levels of linoleic acid, such as olive and canola oil, are better for frying. Polyunsaturated oils, such as corn, sunflower, and safflower, are best for using in dressings rather than cooking with.
With canola oil there may be differences in processing or filtering but nothing would make it worth much more than the other.
Processing. At present, there are two locally based canola crushing operations and both are small by international industry standards. These are located at Pinjarra and Kojonup.
Export plays a significant role in the Australian Oilseeds Industry, with over a billion dollars exported annually of seeds, oil and meal; Canola and Cottonseed are the primary export oilseeds.
