Don't wait for them to stop signing, just walk through. You don't even have to apologize, they understand. It may seem disrespectful to people who can hear, but to deaf people it is completely acceptable.
Similarly, it is considered incredibly rude to grab a deaf person's hands while they are signing. In the deaf community, this is the equivalent of holding your hand over someone's mouth to prevent them from speaking.
In most cases: Absolutely. Many tourist books say that natives of a foreign country are put at ease when you make sincere attempts at learning their language. Deaf community norms include: Maintaining eye contact. Being blunt and direct, whether in description or opinion. Waving, tapping the shoulder, stamping on the floor, banging on the table, and turning the lights on and off to get someone's attention.
Eye contact is extremely important. Hearing people often talk to each other with comparatively little eye contact, but within Deaf culture, avoiding eye contact can be seen as rude. Looking away while someone is signing to you is definitely a no-no.
Pointing is acceptable in the Deaf community, and is indeed often used as a means of establishing a reference point in ASL. This disconcerts many hearing people who were taught “it's not polite to point!”
The phrase 'fall on deaf ears', for example, both perpetuates stereotypes and simultaneously obscures the reality of the situation it describes. Being deaf is an involuntary state, whereas hearing people who let pleas 'fall on deaf ears' are making a conscious choice to ignore those requests.
