Feta. Feta is saltier and won't melt as well as parmesan – but will give an intense boost of flavour so will be better than no cheese.
Feta cheese, Cotija cheese, paneer cheese, and halloumi cheese are all good substitutes for mozzarella that will not melt. Feta cheese can be eaten fresh, like mozzarella, and doesn't require any cooking to bring out the salty and tangy flavor of the cheese.

Mastelo cheese
Similar to halloumi – although it's creamier and less squeaky and salty – Mastelo can also be made from sheep's milk, which has a slightly more yellow colour and elastic texture.
Nutritionally haloumi cheese contains slightly less fat (26 per cent) than regular cheddar cheese but more than double the sodium content thanks to the brine used to preserve it. Haloumi is delicious, and as such one of the biggest issues it poses is the risk of overeating.

Panela Cheese
It is white and made from cow's milk and has a texture similar to halloumi. Panela cheese can be sliced up or grilled, and it holds its shape really well. Like halloumi, panela cheese is a good feta substitute if you want it grilled.
Cottage cheese has a similar texture to feta, but is milder in flavor. It's also lower in sodium and fat. This cheese makes a great substitute anywhere you'd use feta if you're looking for a healthy alternative. Cottage cheese works great as a 1 to 1 substitute for pasta, salads, and even pizza.
