There would be a new divide in the Galaxy--one between those who considered Palpatine a Martyr, and those who saw him as nothing more than a Deceiver. Hatred for the Jedi would grow further, as many would see them as power-mad military commanders who had just executed the Supreme Chancellor in cold blood.
Anakin Wouldn't Become Vader & The Sith Would Be Destroyed
The clearest impact of Anakin choosing Mace Windu over Palpatine is that he would immediately fulfill the Chosen One prophecy and destroy the Sith rather than join them as Darth Vader.
In the canon timeline, Mace Windu is known as the Jedi Order's greatest champion. With this in mind, it's easy to understand why Mace is one of the few beings capable of defeating Palpatine.

Palpatine admits to Darth Vader that the Jedi he actually feared most was none other than Jocasta Nu.
In the novelization of Revenge of the Sith, we see that Palpatine feels genuine fear during this battle. Not only this but when asked about the fight George Lucas himself has said that Palpatine WAS overcome. This is due to mainly to Mace's fighting style, reflecting the power of Palpatine back at him.
This isn't to say that Mace Windu isn't powerful when it comes to the force. He's on par with Darth Maul and is more powerful than Qui-Gon Jinn. But, Obi-Wan is still the stronger Force user which makes him a powerful combatant.
The maverick Jedi Master Qui-Gon Jinn comes before the Jedi High Council, which Windu is a member of, and offers to train Anakin Skywalker, believing that the boy is the Chosen One of Jedi prophecy. Windu and the other Council members decline, deeming Anakin too old and full of fear.
Giving in to his feelings, Anakin cuts off Mace Windu's hand, giving Palpatine the opportunity to kill him. Anakin regrets this almost instantly, but the thought of Padme was stronger than his remorse This is the moment Anakin officially became Darth Vader and led to serious issues in the Skywalker Saga.
Anakin would have likely been killed by the clone troopers, along with the other Jedi. However, perhaps he would have escaped. He would have taken the pregnant Padme with him. He would have needed to get as far away from the eventual Empire as possible, so perhaps they would have gone with Yoda to Dagobah?
In Attack of the Clones Mace Windu actually regretted killing Jango Fett in the arena on Geonosis. The reason for this will be explained in the video along with how Yoda knew why he couldn't kill Count Dooku.

Leaving Palpatine's office, Skywalker quickly went to the Jedi Temple and informed Jedi Master Mace Windu of Palpatine's true identity, though he was greatly conflicted about doing so.
Mace windu clear winner 9/10 times. His use of vapad would make the fight play out similair to windu vs palpatine. He would use the seething rage pouring out of maul against him, and as mauls force power was so much weaker than windu's it would be an undisputed win for windu.
While Windu is incredibly skilled with the Force and has many different Force abilities, Darth Vader's sheer destructive power whenever he uses the Force is almost unmatched.

Who would win, Yoda Vs Mace Windu? Yoda. Mace Windu is an incredible duelist but it was made clear that he was second to Yoda. Besides his lightsaber style Vaapad was most effective against dark side users as it channeled their power back against them, and would struggle matched up against the pure light of Yoda.
Mace Windu failed in his mission to arrest Palpatine in Star Wars: Episode III - Revenge of the Sith, but Yoda may well have fared better. As powerful as Darth Sidious may have been, it's easy to forget he actually seemed afraid of Master Yoda.
