They went extinct during a mass extinction event millions of years ago.
The last dragon belonging to House Targaryen died young in 153 AC, during the later part of the reign of King Aegon III, who was called the Dragonbane. Her death marked the extinction of dragons in Westeros and beyond, until Daenerys Targaryen managed to hatch three dragons around a century and a half later.
The Dance of the Dragons, the war of succession between Aegon II (the Greens) and Rhaenyra (the Blacks), killed off many dragons. Many fans think the eradication of dragons was plotted by the maesters to rid the world of magic.
The earliest draconic zoomorphic depictions date from the Xinglongwa culture between 6200–5400 BC, while the Hongshan culture may have introduced the Chinese character for 'dragon' between 4700 to 2900 BC.
Let's remember that dragons were constructed in mythology as humans evolved. Most of them were imagined as lizards with similar characteristics and attitudes. However, no large, flying, fire-making dragons probably existed.
The first dragon myths appear with the Sumerian legends of the god-mother Tiamat who transforms herself into a legged, horned serpent, and of the snake Zu who steals the law tablets. Dragons appear in Chinese and Indian legends in about 2700 B.C., and in Egypt a creation myth describes the dragon Apep.
Living Dragons
While there are no creatures on Earth that can fly and breathe fire, there are huge lizards that are known as dragons. Perhaps the most famous is the Komodo dragon, which can be ten feet long and weigh over 300 pounds.
Possibly the oldest dragon myth recorded, the Mušḫuššu dates back to 2100 BCE. “Mušḫuššu” in the language translates to “furious snake.” The Mesopotamians described these creatures as scaly animals with the hind-legs of an eagle, the forelimbs of a lion, a thin, long body, a horned head and a snake-like tongue.
It sounds really cool, but it just doesn't exist anywhere in nature, and there's nothing to suggest it ever did. There are fossils of extinct creatures that look similar to the dragons that ancient legends describe, but they lack the real defining characteristics of dragons.
Revelation 12:3 reads, “And there appeared another wonder in heaven; and behold a great red dragon, having seven heads and ten horns, and seven crowns upon his heads.” Later, in Revelation 20:2, the text calls Satan a dragon. It states that the dragon will be bound for a thousand years.
Saint George offered to kill the dragon if they consented to become Christians and be baptized. Fifteen thousand men including the king of Silene converted to Christianity. George then killed the dragon, beheading it with his sword, and the body was carted out of the city on four ox-carts.

The fossil that was uncovered did, however, possess a spear-like mouth and a row of teeth straight out of House of the Dragon. Dating to more than 150 million years ago, the pterosaur holds pride of place as the largest flying reptile yet discovered in Australia.
Extinction and Revival
By the end of the Dance in 131 AC, only four dragons remained alive: Sheepstealer, the Cannibal, and Silverwing, who had been born years before the war, and the dragon Morning, which had hatched during the war.
The unicorn might not be very old at all, and might have still been kicking until 39,000 years ago. This places its extinction “firmly within the late Quaternary extinction event”, between 50,000 and four thousand years ago, in which nearly half of Eurasian mammalian megafauna died out.
