Go For Raw Honey
It represents honey the way bees made it. Heating or boiling raw honey results in a loss of nutrients. This means that honey that has gone through any kind of heat treatment will not be as nutritious as the raw variety. Try buying unpasteurized honey to get all the health benefits.
Pure Honey: A “pure honey” label means that you are getting 100% honey, without any other ingredients (such as corn syrup, which is sometimes added to industrial honey to reduce costs).
A jar of honey labeled pure generally means it was not diluted with other ingredients like corn syrup. Most pure honey has been pasteurized and filtered to remove all the debris. The resulting product is still 100% honey; however, the label itself doesn't always tell you much about how it was produced.
Regular honey may contain sugars or additives
Some regular honey products contain added sweeteners, such as high fructose corn syrup. Studies show that some products labeled as “honey” may not be 100 percent real honey, but contain sweeteners, such as brown rice syrup.

Manuka honey comes from bees that pollinate Leptospermum scoparium, or the manuka bush, which grows predominantly in New Zealand and also in Australia. Other species of this bush grow all over the world, but do not produce the flowers bees need in order to produce manuka honey.
Manuka honey is more expensive than most other honey because it is rare and only produced in Australia and New Zealand. The flowers the bees collect the nectar from, to make Manuka honey are from the Leptospermum family, which is native to Australia. Farming Manuka honey costs more to produce than other honeys.
