Strange willingly gave the Time Stone to Thanos to save Tony Stark's life. He saw 40,000,605 possible futures and outcomes of the battle against Thanos. He knew that Tony must stay alive so they could come victorious ultimately and restore the universe as it was before Thanos's snap.
Doctor Strange's third eye (the Eye of Agamotto) in the comics, according to Bustle, represents wisdom of the sorcerer Agamotto and his Vishanti. The Eye allows him to see the true intentions of his enemies and break down all magical illusions.
every piece was a gamble, even betting the fate of the universe on the rat. strange played chess with the fate of the universe, sacrificing (chess move) his loss against thanos and giving up the time stone to gain a tactical advantage 5 years later.
So the Ancient one tells us that the time stone will not let you see past the point at which it's weilder dies. However Strange is able to look into the future at the reality where Thanos is defeated. Therefore he can see past the point where he dies because he's resurrected.
Because the Time Stone is what the Sorcerers had. The Reality Stone was buried deep in some pit by Odin's father, Bor, to prevent Malekith and the Dark Elves from getting their hands on it. This occurred long before the sanctum and order of Sorcerers.
Doctor Strange has some of the strongest spells ever known in his arsenal. And for most of these, he does not even need the Time Stone.
Why didn't they just use the stones to bring back Iron Man in Avengers: Endgame? Because he wasn't killed by dusting, so it was impossible to bring him back. Even if they went back in time to get a different Tony Stark, they would risk bringing Thanos back to the present too.

Doctor Strange To The Rescue
We first saw it in Doctor Strange when Stephen used the Stone to reverse the events and bring back Wong. Something similar was carried out by Thanos when he brought back Vision. Hence, there's no reason to believe Strange couldn't have brought back Tony and saved the day.
It's none other than Charlize Theron, playing Clea, the daughter of Dormammu, the big, fiery villain from the first Doctor Strange movie. Or at least, she's the daughter of Dormammu in the comics. In the movies?

When failing to obtain the Book of Vishanti, Defender Strange attempted to absorb her powers to protect the multiverse, but was mortally wounded by the Ribboned Creature.
By referencing No Way Home's multiverse story and the existence of Spider-Man, it can be concluded that Doctor Strange remembers Spidey and the general events that they experienced together. What's changed is his knowledge that it's Peter under the mask.
Eldritch Magic: During his time in Kamar-Taj, Strange learned to manipulate Eldritch Magic and became one of the most powerful sorcerers in the world. Due to the Darkhold's influence, his magic changed from orange to purple.
Who is Superior Iron Man? Superior Iron Man is still Tony Stark but comes from a storyline in Marvel Comics called the Axis event, in which a spell switched the moralities of all the major heroes in the Universe. Before the spell was reversed, Evil Stark protected himself from it, ensuring he kept himself evil.
In Endgame, the significance of Strange raising that finger is that he's telling Tony that this WAS the one possibility, everything was going the way the saw it. This also means that he saw Tony dying, though, and let it go down.
In Marvel Comics, Doctor Strange has been able to lift the hammer off the ground in an immensely strenuous feat of telekinesis, but this did not grant him the power of Thor that Mjolnir contains, acting as a stark reminder that all true holders of Mjolnir must be chosen.
