Ahsoka confirmed in The Mandalorian that someone saved Grogu after the Empire rose to power and hid him away.
In the Star Wars universe, Beq is a Jedi Master who supervises padawans as they go through the Jedi trials and hence explains his role on the game show. It also explains why he is the character that saves Grogu.

At some point, a gang of Nikto mercenaries gained control of the encampment, guarding within its innermost building an infant known as Grogu, who had a bounty placed on him.
As per Luke's training, Grogu began using the Force to balance and leap. Though Grogu chose to return to Din, forgoing any further Jedi training, he was significantly stronger than when he and Luke first met.
Some fans even hypothesized that Grogu literally was a "Baby Yoda" and represented a reincarnated form of the Jedi Master. This is impossible due to Grogu having already been born when Yoda was still alive. Thus, while the Mandalorian is Grogu's adoptive father, his actual parents remain a mystery.
