The Jedi prophecy foretold the destruction of the Sith, but it never predicted the end of darkness. Although Anakin Skywalker brought the Force back into balance, the Jedi Order was decimated by his actions as Darth Vader, leaving Luke Skywalker as the last of the Jedi.
He essentially adopts aspects of both the light and the dark combined, becoming a neither a dark nor light Jedi, but a combination of both, thus bringing balance to the force.
How did Anakin bring balance to the force if palpatine wasn't even really dead at any time? The argument is that Anakin killed palpatine and brought balance to the force. That's atleast what his force ghost says to rey in the movie.

Anakin Was Meant To Destroy the Jedi Order
Although, if Anakin's prophesy was fulfilled, it suggests that his turn to the dark side was meant to happen all along. If Anakin had killed Palpatine in Star Wars: Revenge of the Sith, then the Jedi would see the prophecy as fulfilled.
The canonical comic Star Wars: Darth Vader #7 confirms the younglings' deaths caused Anakin grief, self-loathing, hatred and pain, fueling his descent even further into the dark side.
He almost immediately began to feel remorse for the things he'd done, but by the same token he felt that the atrocities he'd already committed had already set him on the path he was taking.
Anakin ultimately fulfilled his role as the Chosen One and brought balance to the Force, fulfilling Qui-Gon Jinn's belief in the prophecy that foretold Anakin's destiny. Accepting his fate, Anakin joined his Jedi mentors in death by becoming one with the Force.
Anakin Was Already Gone After Star Wars: Revenge of the Sith
Even if he still desired to do good, his anger had corrupted him to the point of no return. And this anger was amplified even further once he believed he caused Padme's death, as now he had nothing but a deep hatred for himself and everything around him.
It took some time, but Star Wars has officially explained why Qui-Gon Jinn was the only Jedi who could have saved Anakin Skywalker - because only Qui-Gon learned the truth about the Dark Side that Obi-Wan, Mace Windu, and even Yoda never realized.
Many theories have come out in regards to Padme dying despite the medical droid insisting that she was medically and physically healthy. She appeared to have “lost the will to live.” The most common theory states that perhaps Palpatine used Padme's life force to heal the barely alive Anakin.
With Chancellor Palpatine's death, the de facto "Prime Minister" of the Republic, the Senate would be left without a leader and there would be considerable political confusion and chaos. There would be a need to elect a new chancellor to lead the democratic government.
Anakin would have likely been killed by the clone troopers, along with the other Jedi. However, perhaps he would have escaped. He would have taken the pregnant Padme with him. He would have needed to get as far away from the eventual Empire as possible, so perhaps they would have gone with Yoda to Dagobah?
He regretted it the moment he did it. He asked himself what he just did, dropped his lightsaber, and was visibly ashamed of himself when Palpatine anointed him a Sith Lord and began his speech about wiping out the Jedi.
They were afraid of him. Simply put they saw in Anakin a power so strong they were afraid they could not control him.
Yes, he did. He regretted it everyday. But he had no choice. He had gone too far.
Anakin does not have even the slightest bit of remorse. By the end, he feels nothing but anger. Although he feels regret for killing Padme, he still helps the evil Emperor. The film ends with Anakins standing side by side with the man on whose behalf he has committed all his crimes.
Had Anakin not converted: Padme would have been killed by the Emperor before childbirth, and before Anakin and Obi wan returned from the mission to destroy general Grievous. Regardless: order 66 probably still would have happened since the army was under control of the dicator in Palpatine.
Padme Amidala
Padme Amidala's secret marriage with Anakin Skywalker was one of the biggest reasons he eventually turned to the dark side. His emotions and love for her often clouded his judgment, and sometimes led him to be violent.
Not only did the Dark Lord deem the project a failure, his efforts ultimately backfired and caused the midi-chlorians to create Anakin Skywalker, the prophesied Chosen One of Jedi legend who was destined to restore balance to the Force by destroying the Sith.
George Lucas himself has stated that Anakin is the Chosen One and that the prophecy is true, although it had been misinterpreted by the entire Jedi Order. Lucas believes that both the dark side—greed— and the light side—compassion—are integral parts of human beings.
Anakin Skywalker's turn to the dark side seemed to prove he wasn't the Chosen One, but Star Wars revealed that the real chosen one is Darth Vader.
This is confirmed later in the movie when Obi-Wan informs Padme that Anakin killed them. Both are torn apart with hurt and confusion, trying to make sense of something so terrible.
Did Darth Vader ever regret killing Obi-Wan Kenobi in Canon or EU? He does. Right at the end. With Luke crying over him and Vader sensing his anguish and pain he had inflicted on all those who had cared for him.
Part of Anakin's eventual full blown hatred would have been caused by believing that Obi Wan, his former Jedi master, had betrayed him and promulgated both Padme's betrayal and death as well. Vader in his blind hatred of Obi-Wan may have extended this hatred to all the Jedi as well.
