Start cooking the potatoes in cold water: This ensures that the potatoes cook evenly. Otherwise, if you start with hot or boiling water, the outsides of the potatoes cook and soften while the middles are still hard and crunchy.
Step 1: Soak Potato Pieces
Soak the baking potatoes for just a few minutes in cold water to release some of their starch so the cooked spuds don't get gluey. A combination of starchy bakers and more waxy, buttery Yukon Golds creates an ideal creamy-yet-fluffy final texture in the mash.
If you first boil water and then add potato pieces, you'll have a less than ideal texture in the end. The sudden bath of boiling water will quickly cook the outside of the spuds while leaving the inside uncooked. Instead, add all your potato cubes to a pot, and fill it with water just over the top of the potatoes.
Soaking potatoes in water helps remove excess starch. Excess starch can inhibit the potatoes from cooking evenly as well as creating a gummy or sticky texture on the outside of your potatoes. Cold water is used because hot water would react with the starch activating it, making it harder to separate from the potatoes.

If keeping potatoes in water for more than an hour, refrigerate. However, don't soak them any longer than overnight—after that, the potatoes start to lose their structure and flavor.

For most potato dishes it's important to add the potatoes to cold water and allow the water to come to a boil with the potatoes in the water. The potato starch can react as soon as it comes in contact with hot water, which will promote uneven cooking and mealy potatoes.
The most important part here is that you use cold water instead of boiled – if you boil the water first, the outside will cook faster than the inside resulting in an uneven texture. Cubed spuds will take around 15 minutes where larger chunks or whole new potatoes will be 20-25 minutes.

The lesson here is that you can keep potatoes from turning brown by storing cut potatoes in cold water to slow the oxidation process (aka the thing that makes peeled potatoes turn brown).

The Mistake: Cutting Potatoes Into Too-Small Pieces
They'll absorb too much water during cooking, preventing them from soaking up all the yummy butter and cream when it comes time for mashing. The best-size chunks for boiling: about 1 1/2 inches.
Here's how to do it: For every pound of potatoes in your mash, drizzle 1 tablespoon of melted butter over the dish and fold it gently into the potatoes. If the mash is still too gluey for your liking, repeat the process with another tablespoon of butter.
Make-ahead mashed potatoes are a great option for the holidays. You can do nearly everything — boil, peel, and mash; stir in milk and salt — up to two days ahead. Before serving, reheat. Adding butter at the last minute makes them taste freshly mashed.
Prepping the potatoes ahead of time
To save time on peeling and chopping on Thanksgiving Day (or any other day that includes mashed potatoes), you can peel the spuds and keep them submerged in a bowl of water in the fridge, whole or cut up, for hours — even overnight — before boiling.
Fill a large bowl with cold water and stir in 2 tablespoons of salt. Place the sliced potatoes in the salt water and let them soak for 15 to 30 minutes. This will help them bake up crispier. When the potatoes are done soaking, drain them, and dry very well with a towel.
Cover the pot with a lid. Cook the potatoes in gently boiling water until tender, about 15 minutes for small red potatoes, new potatoes or cubed large russet potatoes, and 20 to 25 minutes for quartered potatoes.
Ideally, you should wait until your water is at a rolling boil. The boiling water will agitate and dissolve the salt quickly. You can add salt to your cold water if your prefer, though. You don't want to forget it after all!
Rinse twice to remove the starch: rinse once before cooking and one more time after cooking. Start with the potatoes in a pot of cold water (instead of pre-boiling the water) to ensure even cooking from the outside in. Use a potato ricer to press the potatoes.

Bring the water to a boil. Reduce heat to medium low. Cover the pot with a lid and let simmer until fork-tender, about 10-15 minutes for small and/or cubed potatoes or 20-25 minutes for large potatoes. Drain and cool.
