They live for 1000 years, but grow both physically and mentally the same as a human for the first 20ish years and then just stop aging for a few centuries. And all cases of Elves I know of work that exact same way, D&D being a great example.
While Mihoyo has never officially announced Klee's age, in-game information along with player speculation suggests Klee is around 7 years old.
So, Mentally, she is seven years old, but physically, she is about one hundred years old.
In terms of looks, age Kli ≈ 7-10 years. However, if you delve into the history of the girl, you can find out the following: the elves to whose race she belongs are long-lived. Therefore, Klee may be much older than she looks and behaves, because her childhood lasts longer than that of people.

Klee loves her fellow knights, and is well-loved by them in turn. She is particularly fond of Kaeya and Albedo. Whenever she heads out of the city to play, she always follows the "survival rules" which Kaeya gave her. Albedo, on the other hand, is an older brother figure who takes care of her.
First off, during the cutscene with Alice's recording, we most notably hear about Alice and Klee being elves, with much longer lifespans than humans. We technically already knew that seeing Klee's ears.
Klee and Razor know each other and appear to be Good friends with each other.

Albedo and Klee aren't blood-related, but Alice helped to take care of Albedo and asked that he think of Klee as his sister. The two have taken on a sibling-like relationship, and Albedo is close to Klee.

According to the lore, Klee was apparently powerful enough to level the Stormbearer Mountains. So far there haven't been any characters capable of doing that in the game, at least according to the story.
