A boiling start for 30 seconds to a very gentle simmer for 13 minutes, then an ice bath at the end makes perfect, easy-to-peel
Adding white vinegar or apple cider vinegar to your pot of water allegedly results in softer, easier-to-peel eggshells. That's because the acid in vinegar dissolves some of the calcium carbonate that makes up the egg's hard exterior.
The quick cooling of the hard-boiled eggs causes the egg whites to contract, freeing them from the membrane. If you let them cool for about 15 minutes, the peeling is much easier.
Here's her hack for how to peel hard-boiled eggs in large batches: Put five thoroughly cooled hard-boiled eggs into a small plastic container with some cold water, top with the lid and then gently rock and shake until the shells break and fall away. You'll almost always end up with perfectly peeled eggs.
While overcooking hard-boiled eggs does have its obvious drawbacks — rubbery dry whites and pale crumbly yolks — it actually does make them easier to peel. That's because one of the determining factors in peel-ability is the pH of the egg — the higher (less acid), the easier.
This is because the egg white or “albumen” in a fresh egg has a relatively low pH level, making it acidic. When cooked, these fresh egg whites bond strongly to the inner shell's membrane. As an egg ages, the pH level rises and the inner membrane is less likely to bond to the albumen, so the shell peels off much easier.
If you boil an egg for five or 10 minutes, it becomes firm and cooked. If you boil it for hours, it becomes rubbery and overcooked.
Peeling hard-boiled eggs is easiest immediately after cooling because the cooler temperature helps to contract the egg in its shell. To make it even easier to peel your eggs, place them into an ice bath right after you've boiled them.
Give the eggs at least five minutes in the ice bath before you try to peel them—letting them cool may help make it easier to peel them, but it's also so you don't burn your hands.
Leave eggs in the ice bath for 10+ minutes to allow for thorough cooling/easy peeling (you can place them under running cold water instead, but without the cold shock from the ice bath, you may have a harder time peeling, especially if your eggs are farm fresh like ours).
This is because an egg shrinks inside during storage, which pulls the inner membrane away from the inside of the shell.
Why are some eggs easier to peel than others? As a rule, the fresher the egg, the more difficult it is to peel cleanly. The albumen (white) of a just-laid egg contains a store of dissolved carbon dioxide, a weak acid. (CO2 is what makes very fresh raw egg whites appear cloudy.)
Boil for 6 – 7 minutes over medium-high heat for perfect hard-boiled eggs. Using a slotted spoon, transfer them to a large bowl of ice water and let them cool for a few minutes. Or you can place them under cool running water to stop the cooking.
As soon as the water begins to boil, turn off the heat and cover the pot. Leave the eggs in the hot water for anywhere from 10-12 minutes, depending on how you like your eggs. The 10-minute eggs will have vibrant, creamy yolks, while the 12-minute yolks will be paler and opaque, with a chalkier texture.
For one to four eggs, bring the water to a rolling boil, cover the pot, and turn the heat down to its lowest setting for 12-14 minutes. For five to eight eggs, cook for 15 to 18 minutes. For nine to one dozen eggs, cook for 20 minutes.
Lower your eggs straight from the fridge into already-boiling water, or place them in a steamer insert in a covered pot, steaming at full blast on the stovetop. If boiling, lower the heat to the barest simmer. Cook the eggs for 11 minutes for hard or six minutes for soft.
Just bring a pot of water to a boil with enough water to cover the eggs by about an inch. By boiling the water first, it also doesn't matter which type of pot you use as the eggs only hit the water once it's boiling: 212°F (100°C).
You might have heard that you should drop your eggs into room temperature or cold water and then bring the water to a boil. This is a myth. In our tests, bringing the water to a boil first and then lowering the eggs into the bath made for easy peeling and more accurate timing.
To avoid getting a green yolk, cook your eggs just long enough to reach the desired doneness—no more. And quickly plunge the cooked eggs into cold water to stop the cooking process and minimize the iron-sulfur reaction. Some people also say that the cold-water plunge makes eggs easier to peel.
