Vegetable oil is one of my favorite oils to use for sauteing and deep frying because it's completely neutral in flavor and it has a high smoke point of 400-450 ℉.
The best oils for standing up to high heat during frying are avocado, peanut, canola, sunflower, and sesame oil. These oils have a high smoke point (400°F and higher), which means they are better suited for cooking at higher temperatures.
Oils with more monounsaturated fats, such as rapeseed and olive, are also less susceptible to heat. Rapeseed oil (often sold as generic vegetable oil) and inexpensive olive oil are therefore the best choices for cooking. All cooking fats add fat and calories to your diet.
Canola oil has a neutral flavor and is the best oil to fry fish because there's no risk of it overshadowing the taste of your fish. It also has a high smoke point, and because it is highly refined, canola oil is very stable. It contains high levels of omega-6 and -3 fatty acids, which makes it a healthy oil option.

The potatoes we use to make our famous chips generally come from Tassie and Victoria and the high-oleic canola oil we use for cooking them is also Australian-grown.
Once at the restaurant our fries are simply cooked in dedicated frying vats in a non-hydrogenated blend of sunflower and rapeseed oil which is 100 percent suitable for vegetarians (McDonald's French Fries are officially accredited by the Vegetarian Society).
Although care must be taken in handling and processing of canola oil and other vegetable oils, canola oil is a safe and healthy form of fat that will reduce blood LDL cholesterol levels and heart disease risk compared to carbohydrates or saturated fats such as found in beef tallow or butter.
For the moment, it is sustainably sourced according to the Roundtable on Sustainable Palm Oil (RSPO), Rainforest Alliance or equivalent. Since the 31st December 2015 all our soy has been responsibly sourced under the Roundtable on Responsible Soy (RTRS), ProTerra or equivalent.
With some deductive reasoning, KFC's website lists “Chicken Fat” as an ingredient of their gravy making it not suitable for those on a vegetarian or vegan diet. This information is constant with reports that KFC uses gravy powder, water and chicken crackling to make their gravy.
KFC swears by high-temperature, industrial-strength pressure fryers for their extra-crispy skin. While you won't be able to deep fry with your at-home pressure cooker, you can still recreate the KFC crunch with a deep fryer, a Dutch oven, or a heavy-bottomed pot.
The best oils for frying tend to be those high in saturated fats, such as peanut oil, vegetable shortening, or lard. They'll not only have the longest lifespan, but they'll also produce the crispest results.
