What makes McD's food so addictive is the fat content in all of its foods. Fat content increases flavor in foods. So the addictive component of McD's foods is the fat in such items as buns, bisquits, chicken, fries, burgers, shakes, sodas, breakfast burritos, bacon, sausage, etc.
Within the food industry, this combination created a wave of craveable and addicting foods. Eating those tasty McDonald's fries even releases dopamine in your brain, the neurotransmitter that triggers feelings of pleasure.

That's because, first and foremost, McDonald's does not offer free refills on french fries. According to Mashed, there is only one location — in St. Joseph, Mo., where free refills are an official policy.

Yep. The most common potatoes we use for McDonald's fries include the Russet Burbank, Russet Ranger, Umatilla Russet and the Shepody—varieties known for producing a flavorful fry that's crispy on the outside and fluffy on the inside.
French Fries
Ingredients: Potatoes, Vegetable Oil (canola Oil, Corn Oil, Soybean Oil, Hydrogenated Soybean Oil, Natural Beef Flavor [wheat And Milk Derivatives]*), Dextrose, Sodium Acid Pyrophosphate (maintain Color), Salt.
Once arrived at the plant, the potatoes are peeled and forced through a cutter at 65 MPH to make uniform fries. They're then briefly immersed in hot water to remove excess natural sugars for color reasons.
It all comes down to water activity. See, a McDonald's hamburger is small and thin, giving it a very high ratio of surface area to volume. It is cooked well-done on a very hot griddle. These factors contribute to rapid moisture loss, resulting in a burger that dries out long before it can start to rot.

Beef tallow was initially used because the supplier for McDonald's couldn't afford vegetable oil. In the 1990s, as health concerns over saturated fat reached an all-time high, McDonald's faced a backlash against the use of beef tallow, and worried about losing customers, the chain switched to vegetable oil.
Unfortunately, no McDonald's menu items are certified as vegan or vegetarian. While some ingredients may not contain animal ingredients, we cannot guarantee that there will be no cross-contamination of ingredients during transportation, storage or preparation in our kitchens.
However, if you are in the U.S., Australia, Canada or most other countries, McDonald's french fries are not vegetarian due to the beef flavor + cross contamination issues. As far as we know, there are no plans to change the ingredients to accommodate other dietary choices such as vegan or vegetarianism.
