Stephanie recommends tapping the eggs to break the membrane for easy peeling.
To peel my egg, I like to use the convex side of a spoon to give some firm taps—much firmer than the ones used when the egg was raw—to break the shell all over, then peel it away. I used this method across all the eggs I tested. Pre-peel, I crack the shell all over for easier peeling.
When you hard cook an egg, this air heats up, expands, and escapes through pores in the shell—but not before the egg white sets. This leaves the egg with a flattened end. Pricking the egg provides a quick escape route for the air, which gives you an egg with a smoothly rounded end.
The pointier the narrow end, the better. Tap the shell on your teeth as a good shell will make a light, high-pitched tap compared to the duller sound of the weaker one. Use a firm grip and come down hard on your opponent, and believe in your victory. If all else fails, get a fake egg and crack open the rest.
Greece – Egg Tapping
In Greece, Easter is considered the most sacred holiday of the year and is marked by many traditions. One of these is the tapping dyed Easter eggs together, a game called tsougrisma that is believed to bring good luck.
In the Orthodox and Eastern Catholic Churches, Easter eggs are dyed red to represent the blood of Christ, with further symbolism being found in the hard shell of the egg symbolizing the sealed Tomb of Christ—the cracking of which symbolized his resurrection from the dead.

On Easter Sunday, it is a tradition for Greek and Armenian families to gather and play a game of egg tapping. Similar traditions exist in many different places such as in Cajun communities in Louisiana or for other occasions, like the Persian New Year Nowruz (celebrated at the beginning of spring).
First, fill a bowl or glass with about four inches of cold water and gently place your egg(s) inside. Very fresh eggs will sink to the bottom and lay on their sides. If an egg stays at the bottom but stands on its small end, it's still acceptable to eat; just not quite as fresh.
If it sinks or stays at the bottom, it is still fresh. An older egg will either stand on its end or float. The float test works because air builds up inside the egg as it ages, increasing its buoyancy. The general rule of thumb to make hard-boiled eggs is to boil (simmer) them for 13 minutes. A roaring boil can crack your eggs, so yes, first bring the water up to a boil, then let the eggs simmer for 13 minutes before transferring them to an ice bath.
Here's her hack for how to peel hard-boiled eggs in large batches: Put five thoroughly cooled hard-boiled eggs into a small plastic container with some cold water, top with the lid and then gently rock and shake until the shells break and fall away. You'll almost always end up with perfectly peeled eggs.
Cleaner break: The rim of the bowl is more likely to tear the shell's membrane, making it easier to separate the two halves. Bigger shards: The countertop spreads the impact over a larger area, so the shell is crushed more gently into larger pieces.
